Eating lighter in the New Year? Grilled chicken (and a side salad) needs to be on your menu tonight.
CITRUS TEQUILA CHICKEN
3 lbs of bone-in, skin-on chicken breasts
1 lemon
3 limes
1/2 cup of tequila
1/4 cup of vegetable oil
2 Tbsp of chili powder
1 jalepeno, seeded and diced
2 cloves of garlic, minced
1 tsp of salt
(This recipe needs to be made in advance so that the chicken can absorb the marinade for at least 4 hours before cooking.)
Pat chicken dry. In a large bowl, mix all remaining ingredients. Place chicken in the bowl, making sure to coat entirely with the marinade.
Cover and refrigerate 4 hours, or it’s best to let it sit in the refrigerator overnight.
Preheat grill. Place each breast on a well-oiled grill and cook about 7-8 minutes per side. The chicken needs to be cooked to a temperature of 165 degrees or until juices run clear.
Serve with a crisp salad.
