Meatloaf Patty Melts are the best meatloaf sandwiches you can ever try. (I never was a big fan of cold meatloaf on white bread anyway.) Just like a good patty melt, this gets a little messy. Dip it in ketchup and go for it!
Ingredients:
6 slices of leftover meatloaf
1 yellow onion, sliced
2 Tbsp of vegetable oil
salt and pepper to taste
12 slices of swiss cheese
12 slices of seeded rye bread
Ketchup for dipping
In a large skillet, heat oil. Add onions and cook until they are tender and start to brown. Remove from heat and set aside.
In the same skillet, place slices of meatloaf and fry until brown on each side. Remove from heat and set aside.
Butter one side of each slice of bread. Place, butter side down, onto a hot skillet. Layer cheese, meat, onions and a second piece of cheese. Top with another slice of bread and cook, flipping once, until cheese is melted and bread is crisp.
Slice in half and serve with ketchup as a dipping sauce.
